Roasted Beets with Orange Habanero Horseradish Pepper Jelly by Brosmore's Pepper Patch
Preheat oven to 375
Quarter beets to approx the same size
spray cookie sheet with Pam or use parchment paper
start with 4 oz of Orange Habaner Horseradish Pepper Jelly and thin down by microwaving 30 secends on high
Brush beats on all sides with Pepper Jelly and bake until Beets are tender
Use the remaining 4 oz of the 8 oz jar of Pepper Jelly heat 30-45 seconds in microwave and stir 1/4 cup Canola oil or if you want a Asian flavor use Sesame Oil.
Peel Beets and chop , serve over green salad, kale salad or a fruit salad. Drizzle the Pepper Jelly mixed with the oil for dressing. Remaining dressing can be refrigerated for later use. Roasted beets can be refrigerated seperately or in the salad dressing.
